800 Café vegetarian spring meal scheduled

The dietetics students of NDSU's 800 Café have scheduled a "March into Spring" meal for Thursday, March 5, and Friday, March 6. A vegetarian three-course lunch will be served on the third floor in the Food Production Laboratory Complex in the breezeway between the Katherine Kilbourne Burgum Family Life Center and E. Morrow Lebedeff Hall. The two seatings are set for 11 a.m. and 12:15 p.m.

Dietetics students Tracey Dillon, Shelby Hohloch, Hanna Johnsen and Amy Peick are the managers for the meal. The plant-based lunch begins with a tomato and basil bruschetta on two slices of a toasted French bread topped with a Parmigiano-Reggiano cheese. The main entrée is a garlic and basil vegetable pasta with a balsamic vinaigrette. The meal concludes with a lemonade sorbet with fresh slices of lemons and raspberries.

The 800 Café is operated by students in a class taught by Sherri Nordstrom Stastny, associate professor of health, nutrition and exercise sciences.

The vegetarian meal is $10 and includes choice of beverage. Four-meal punch cards also are available for $35 at the door. Payments can be made in cash or check. Paid parking is available in the NDSU visitor’s lot on campus. Walk-ins are welcome, but reservations are encouraged because seating is limited.
