NDSU pork processing workshop scheduled

NDSU’s Department of Animal Sciences has scheduled a pork processing workshop Dec. 6-7 at the NDSU Meat Laboratory.

“This course will cover all steps from slaughter to processing, including sausage making and smoking,” said Austen Germolus, meat science research specialist and one of the workshop presenters. “This great hands-on experience is for anyone who would like to learn more about meat processing and gain an insider's view of the meat industry.”

Topics include processing meat safely, humane slaughter, pork carcass fabrication, pork retail processing, and pork pricing and packaging.

The registration fee is $150 per person, and the registration deadline is Nov. 27.
