Assistant professor joins plant sciences department

Chen

Bingcan Chen has joined the NDSU Department of Plant Sciences as an assistant professor in food and cereal chemistry.

Chen earned a bachelor's degree in food science and technology at Sichuan University of Science and Engineering and his master's degree in pharmacochemistry at Chongqing University, both in China. He earned a doctorate in food science from the University of Massachusetts in Amherst. After his graduation, Chen moved back to China, where he held a professor position for nearly three years.

Chen’s research focuses on food and cereal chemistry, including lipid oxidation mechanisms and antioxidant strategies in food systems, novel antioxidant constituents and bioactive ingredients from cereals, and flavor formation in cereal products.

His teaching responsibilities at NDSU will include food chemistry and food analysis.
