Recent research from the NDSU animal sciences department was reported by the Meatingplace website. The researchers developed a computer vision system with artificial intelligence modeling technology to predict pork color and marbling quality.

The research, “Prediction of pork loin quality using online computer vision system and artificial intelligence model, was published on ScienceDirect. The paper was written by Xin Sun, animal science research scientist; Jennifer Young, swine research technician; former animal science doctoral student Jeng-Hung Liu; and David Newman of the University of Arkansas, Fayetteville.

The researchers assessed whole boneless pork loins in a processing plant as a predictor for pork quality on individual chops, designed and validated a research tool based on their computer vision for pork quality online evaluation and developed an artificial intelligence prediction model for pork loin color and marbling objective quality assessment.

“The objective of the research is to investigate automation technology that can evaluate pork loin quality under industry online detection environment,” Sun explained. “Our system is located in the Animal Nutrition and Physiology Center.”
