Student-run 800 Cafe set to serve plant-based lunch

NDSU’s 800 Caféis scheduled to a plant-based lunch. The meal is set for Thursday, April 5, and Friday, April 6, in the Food Production Complex on the third floor of the Katherine K. Burgum Family Life Center. Seating is from 11 a.m. to 12:15 p.m. 

The menu is:

·     Brazilian black bean soup 

·     Mediterranean whole-wheat spinach veggie wrap, with romaine lettuce and fresh basil, sautéed onions, zucchini and peppers, with cilantro hummus, balsamic sweet potato salad and sweet cranberry-orange sauce. 

·     Almond chocolate truffles made of dates, rolled in fine coconut and garnished with an orange twist, raspberries and mint leaf.

Dietetics students Rachel Reuther and Julia Lutgen will manage the meal with the help of their classmates.

The cost is $10 per person and includes beverages. Cash or check are acceptable forms of payment.

Walk-ins are welcome, but reservationsare preferred due to limited seating. The café is open to the public and parking is available in NDSU’s visitor lot on the south side of the Memorial Union. The Katherine K. Burgum Family Life Center is connected to the Memorial Union.

The 800 Café is operated by NDSU dietetic students. All meals are under 800 calories. Sherri Nordstrom Stastny, associate professor of health, nutrition and exercise sciences, is the class instructor.

The café is open Thursdays and Fridays through April 26.
