800 Café to feature ‘Meatless Monday’ meals

The NDSU student-managed 800 Café is set to present pick-up meals inspired by “Meatless Monday” recipes on Thursday, April 8, and Friday, April 9.

The starter will be an Asian side salad with bell pepper, purple cabbage, carrots, green onions and toasted sesame seeds with a sweet peanut dressing. The entree is a mix of curried chickpeas, curried brown rice, bedded with kale and a sweet lemon cabbage. Finishing the meal is a fruit kabob with slices of kiwi, strawberries and pineapple.

Pickup begins at 11 a.m. and ends at 12:15 p.m. Each meal cost $10 per person, and four meals can be purchased for $35 with a punch card. Payments can be made in the form of cash or check at the door when picking up your meal at Family Life Center 312. Make a reservation online.

The April 8 meal will be managed by is junior dietetic major Mikayla Koenig, who is from Page, North Dakota. The April 9 meal will be managed by Amanda Perrot, who is from Coeur d’Alene, Idaho, but moved to Fargo to study dietetics.

With limited meals available, reservations are preferred but walk-ups are welcomed. Social distancing and careful consideration of the use of masks are required.
